Winter Melon Soup

Winter Melon Soup is a widely consumed comforting soup as winter melon helps reduce heat, and is good to be consumed in hot summer weather and after eating too many fried food.

Ingredients:

  • 1.5 litre of water
  • 100g pork rib
  • 1/2 winter melon
  • 10 red dates
  • 1 pc dried cuttlefish (optional)

Seasoning:

  • 1 teaspoon salt, to taste

Steps:

  1. Scrub the skin of the winter melon, clean and cut it into smaller chunks.
  2. In a small pot, blanch the pork ribs in boiling water for a few minutes (so as to remove the scum bits). Drain the pork ribs and set aside.
  3. In a pot/ slow cooker, boiled the water.
  4. Add all the ingredients in the boiled water. For best results, simmer in low heat for 4 hours prior to serving.
  5. Season to taste with salt.
