Winter Melon Soup is a widely consumed comforting soup as winter melon helps reduce heat, and is good to be consumed in hot summer weather and after eating too many fried food.
Ingredients:
1.5 litre of water
100g pork rib
1/2 winter melon
10 red dates
1 pc dried cuttlefish (optional)
Seasoning:
1 teaspoon salt, to taste
Steps:
Scrub the skin of the winter melon, clean and cut it into smaller chunks.
In a small pot, blanch the pork ribs in boiling water for a few minutes (so as to remove the scum bits). Drain the pork ribs and set aside.
In a pot/ slow cooker, boiled the water.
Add all the ingredients in the boiled water. For best results, simmer in low heat for 4 hours prior to serving.
