Tomato Noodle Soup

Tomato Noodle Soup is made with very simple ingredients and can be made in less than 15 mins. It is a healthy all-in-one meal as it contains vegetable, protein and carbohydrate.

Ingredients:

  • 1 noodle of your choice (vit’s noodle, mee suah, angels hair…etc)
  • 2 tomatoes cut into wedges
  • 1 egg, beaten
  • 1/2 teaspoon minced ginger
  • 1 spring onion, chopped

Seasoning:

  • 1 tablespoon tomato sauce
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 1/2 teaspoon white pepper
  • 2 tablespoon of vegetable oil
  • 2 cups hot water

Steps:

  1. Boil a pot of water, add salt and cooked noodle for 2 minutes (or according to packing instruction). Drain and transfer to a large bowl soup. Toss with a few drops of oil to prevent the noodles from sticking.
  2. Heat oil in a pan & add in tomato wedges and minced ginger. Stir-fry for about 2 minutes or until tomatoes soften.
  3. Add in tomato sauce and hot water. Keep stirring for another few minutes.
  4. Add salt, white pepper and sugar.
  5. Slowly stir in the beaten egg in the pot.
  6. Turn off the heat & pour the soup onto the cooked noodle.
  7. Top with chopped spring onions & served hot.
