Tomato Noodle Soup is made with very simple ingredients and can be made in less than 15 mins. It is a healthy all-in-one meal as it contains vegetable, protein and carbohydrate.
Ingredients:
- 1 noodle of your choice (vit’s noodle, mee suah, angels hair…etc)
- 2 tomatoes cut into wedges
- 1 egg, beaten
- 1/2 teaspoon minced ginger
- 1 spring onion, chopped
Seasoning:
- 1 tablespoon tomato sauce
- 1/2 teaspoon salt
- 1/2 teaspoon sugar
- 1/2 teaspoon white pepper
- 2 tablespoon of vegetable oil
- 2 cups hot water
Steps:
- Boil a pot of water, add salt and cooked noodle for 2 minutes (or according to packing instruction). Drain and transfer to a large bowl soup. Toss with a few drops of oil to prevent the noodles from sticking.
- Heat oil in a pan & add in tomato wedges and minced ginger. Stir-fry for about 2 minutes or until tomatoes soften.
- Add in tomato sauce and hot water. Keep stirring for another few minutes.
- Add salt, white pepper and sugar.
- Slowly stir in the beaten egg in the pot.
- Turn off the heat & pour the soup onto the cooked noodle.
- Top with chopped spring onions & served hot.
