Teochew Steam Fish

Teowchew Steamed Fish is an flavourful dish that is both sour and salty. The key ingredient to this dish is fresh fish, pickled plums, tomatoes and soy sauce. Other ingredients such as mushrooms, pickled vegetables, white tofu can be added too.

Steaming fish does not requires much effort. In fact, the cooking process only took 15 minutes and it was ready to be served. Besides all the fresh flavours, do add some really hot oil onto the fish. This step is optional but the hot oil will make the skin of the fish becomes slightly crispy. That is the final touch to make the dish perfect.

Ingredients:

  • 1 whole fish/ half fish/ fillet
  • 2 tomatoes, cut into wedges
  • 2 mushroom, soaked & sliced thinly
  • 1 block tofu, cut into small cubes
  • 5cm ginger, sliced thinly
  • 1 tablespoon coriander leave

Seasoning:

  • 1 salted plum
  • 1 tablespoon salted plum juice
  • 1 tablespoon light soya sauce

Steps:

  1. Clean the fish & set in a plate dish.
  2. Place ginger on top of the fish (If whole fish, place some ginger inside & bottom of the fish).
  3. Arrange tomatoes, mushroom, tofu, salted plum around the fish.
  4. Add salted plum juice and light soy sauce to the fish.
  5. When water in steamer boils, put the fish inside and steam on high heat for about 15minutes. If a chopstick can easily poke thru the fish, then it is ready to be serve.
  6. Garnish with coriander leave.
  7. Served hot.
