Old Cucumber Soup

Old Cucumber Soup is a very popular soup mainly due to the cooling properties to lower ‘heatiness’ in the body. I grew up drinking this soup prepared by my mother and I also like to prepare it for my family. 

Ingredients:

  • 1.5 litre of water
  • 100g pork rib
  • 1 big old cucumber
  • 10 red dates
  • 1 pc dried cuttlefish (optional)

Seasoning:

  • 1 teaspoon salt, to taste

Steps:

  1. Scrub the skin of the old cucumber clean and cut it in half, length-wise.
  2. Scoop out old cucumber seeds using a spoon. Cut into smaller chunks.
  3. In a small pot, blanch the pork ribs in boiling water for a few minutes (so as to remove the scum bits). Drain the pork ribs and set aside.
  4. In a pot/ slow cooker, boiled the water.
  5. Add all the ingredients in the boiled water. For best results, simmer in low heat for 4 hours prior to serving.
  6. Season to taste with salt.
