Old Cucumber Soup is a very popular soup mainly due to the cooling properties to lower ‘heatiness’ in the body. I grew up drinking this soup prepared by my mother and I also like to prepare it for my family.
Ingredients:
1.5 litre of water
100g pork rib
1 big old cucumber
10 red dates
1 pc dried cuttlefish (optional)
Seasoning:
1 teaspoon salt, to taste
Steps:
Scrub the skin of the old cucumber clean and cut it in half, length-wise.
Scoop out old cucumber seeds using a spoon. Cut into smaller chunks.
In a small pot, blanch the pork ribs in boiling water for a few minutes (so as to remove the scum bits). Drain the pork ribs and set aside.
In a pot/ slow cooker, boiled the water.
Add all the ingredients in the boiled water. For best results, simmer in low heat for 4 hours prior to serving.
