Lotus Root Soup is another popular chinese soup that is delicious and nourishing healthy soup.
Lotus root has a creamy, starchy texture similar to taro root, and it can be prepared in many ways, including boiling, braising, steaming, or deep-frying. Lotus root is a “cooling” food that can restore balance to the body.
Ingredients:
1.5 litre of water
100g pork rib
1 – 2 lotus root
10 red dates
1 pc dried cuttlefish (optional)
100g peanuts (optional)
Seasoning:
1 teaspoon salt, to taste
Steps:
Cut the sides of lotus roots, remove its skin & throughly clean them.
Cut into slices
In a small pot, blanch the pork ribs in boiling water for a few minutes (so as to remove the scum bits). Drain the pork ribs and set aside.
In a pot/ slow cooker, boiled the water.
Add all the ingredients in the boiled water. For best results, simmer in low heat for 4 hours prior to serving.
