Braised Mushroom Chicken is a truly satisfying meal when served with rice or noodles. The chicken and shiitake mushrooms are cooked in a flavorful sauce, resulting in tender and juicy meat.
Braising is combination of cooking techniques whereby the meat is lightly fry before letting it cook or stew in liquid until fully cooked.
Ingredients:
- Chicken drumstick/ chicken thighs
- 3 cloves garlic, sliced
- 1 knob garlic, sliced
- 2 – 3 mushrooms, sliced thinly
- 1 stalk scallions, chop thinly,
- 2 cups of water
Seasoning:
- 1 tablespoon light soy sauce
- 1 teaspoon dark soy sauce
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1 teaspoon cornstarch
Steps:
- Clean chicken.
- In a wok, heat cooking oil.
- Fry ginger and garlic until fragrant.
- Add chicken pieces and stir fry for 1 – 2 minutes.
- Stir in dark soy sauce.
- Add mushrooms and soaking liquid to the chicken.
- When sauce comes to a boil, add sugar, and salt.
- Reduce heat to low and allow it to simmer for 20 minutes, stirring occasionally.
- In a small bowl, mix cornstarch with 2 tablespoon of water in a small bowl.
- Pour the mixture over chicken and let it continue to cook for another 5 minutes.
- When sauce is thickened, transfer to plate.
- Garnish with chopped scallion.
